NYC Game Dinner with Peter Caviston

game_night_10_02On Saturday 23rd January the packed dining room was treated to a feast of game prepared by our Head Chef Cormac Healy and the famous Peter Caviston.

The menu was as follows:

Roasted Teal garnished with a fanned poached Pear, finished with Tomato Ice-Cream and Fruit of the Forest Jus

Warm Plover Salad garnished with Pomegranate and toasted Pine-nuts

 ************************************************

Duo of Pheasant and Jugged Hare on a Parsnip puree dressed with a Beetroot brunoise

Macerated Fruit in a sweet Pompadum garnished with a Ricotta Cream

************************************************

Special guests at the dinner were Timothy Goodbody, Commodore of the Royal Irish Yacht Club, Peter McKenna, Commodore of Howth Yacht and Gerry Dunne, CEO of Dun Laoghaire Harbour Company.

A raffel was held in aid of the Haiti Relief Fund and over €1,200 was raised.
